It's dog Lungs and Head. Here's a set on Flickr with photos documenting the whole process of cooking dog, from being singed (edit: skinning) to disembowling to cooking to serving..
We were planning to go eat dog one day in China, but the plan never did materialize.. there was this one Korean restaurant that was famous for dog. Apparantly dog meat is a COOLING MEAT....

in vietnam, food-dogs are never skinned. they are singed, i.e. the skin is burned. of course the animal is killed by slitting the throat before any of that takes place, so the animal does not suffer much.
